Ice cream can be part of a healthy diet when enjoyed in moderation. There are many varieties of ice cream making it easier to fit your individual needs. Be mindful of the fat and calories in ice cream when you do indulge. It is a high-calorie, high-fat food so keeping portion size in mind is key. A serving of ice cream is now 2/3 cup. Adding some fruit or nuts to this frozen treat can increase fiber and heart-healthy fats in your diet. Fruits are an excellent source of essential vitamins and minerals, and they are high in fiber. Including nuts as part of a healthy diet may be good for your heart. Nuts contain unsaturated fatty acids and other nutrients. A serving of nuts is about 1 oz.

Preparation:
- Preheat grill to high.
- Brush peach halves with oil. Grill until tender.
- Place 2 peach halves in each bowl and top with a scoop of ice cream and coconut.
Banana Nice Cream

Ingredients:

- 4 cups frozen banana slices (2 large bananas)
- 2–4 tablespoons unsweetened almond milk (any kind of milk will work)
Preparation:
- Place frozen banana slices and 2 tablespoons unsweetened almond milk into a high-speed food processor or blender.
- Blend on high for 1 to 2 minutes stopping to scrape the sides every so often.
- If your blender is having a hard time blending the bananas, add more almond milk by the tablespoon.
- Once pureed together, your banana nice cream should be like a super thick smoothie or soft serve.
- Eat immediately or transfer to a parchment-lined bread pan to freeze for later.
- Freeze banana nice cream for 1 to 2 hours so that it hardens enough to scoop like ice cream, but isn’t too hard where you can’t scoop it.
For more flavors:
- Mint Chip – add 1/4 teaspoon mint extract and 1/4 cup mini chocolate chips
- Strawberries and Cream – substitute 1 cup frozen strawberries for 1 cup frozen bananas and use full-fat coconut milk instead of almond milk.
